baking therapy

so my poor hubby wishes he never came home from work. (come on, don’t judge me too harshly! you have days like this too – you probably just don’t blog about them!) 

no matter what kind of person i wish to be today; i just can’t be it. i have apologized but it just doesn’t cut it. i’ve been blunt and mean. things that have been festering for a while now (that i didn’t even know were bothering me this much) have hit the fan (and the fan was on HIGH)…

so i’m baking to get some time to myself and try to CHILL!  :s maybe eating it will do the trick… baking helped at least!

here’s what i made. it’s in the oven now. some of the reviews said it was plain. so i added a cinnamon streusel topping and used double the apples the recipe called for. we’ll see what happens in approx. 12 min. 🙂

INGREDIENTS (Nutrition)

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg, beaten
  • 1/4 cup butter, melted
  • 1 cup apple – peeled, cored and chopped

DIRECTIONS

  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups or line with paper muffin liners.
  2. Stir together flour, baking powder, sugar, cinnamon and salt. In a separate bowl, stir together milk, egg and butter. Stir egg mixture into flour mixture just until combined. Fold in chopped apples. Spoon batter into prepared muffin cups.
  3. Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.

    that sounds very YUMMY! and I do the same thing…sometimes when it’s been a TERRIBLE day, i just wanna come home and make something…sweet, supper, or other and just chill…my kitchen is my sanctuary sometimes! Are you feeling any better? I sure hope so!!

    Oh and i got some castor oil today, so gonna try that…it’s a little bigger, slightly, but not any worse…but not better 😦 so here’s hopin! and i went and picked up a red water bottle, too…instead of the other one…although it wasn’t just a red water bottle it was an enema kit, too! haha…so that was slightly weird to buy! 🙂

    Aww.. I hope you have a better day tomorrow!! Its best just for me to stay quiet on those days!! One afternoon Alex stayed home from work b/c he knew i was have a hard time that day.. just one of those days when nothing goes right and your fuse is so short! I HATE those days! Sorry your muffins didn’t turn out good! Carson and i made cookies today and something wasn’t right about it.. maybe i forgot to write down an ingredient on the recipe card? i dunno, kinda a bummer tho!
