vanilla pudding

oh how i love sharing my favorite things with you!

my new favorite thing is vanilla pudding…

3/4 cup of sugar

3 tbsp cornstarch

3 cups of half n half

4 beaten egg yolks

1 tbsp of butter

1.5 tsp of vanilla

in a medium heavy saucepan combine sugar, cornstarch. stir in half and half. cook and stir mixture over medium heat until thickened and bubbly. cook and stir for 2 minutes more. remove pan from heat. gradually stir 1 cup of milk mixture into egg yolks. add egg mixture to milk mixture in pan. bring milk mixture to a gentle boil; reduce heat. cook and stir for 2 minutes more.

remove pan from heat. stir in butter and vanilla. pour pudding into individual custard dishes or bowls. cover. refrigerate.

the recipe says 4 servings but i think itโ€™s more like 6.

**i accidently used 3 measuring cups full of half n half thinking the cup was 1 cup but it was 3/4 cup. it tastes like store bought gross-for-you pudding with only 2.25 cups of half n half ๐Ÿ™‚ YUMMY!

**this would be so good a top graham cracker crust with a fruit topping! we LOVE the chocolate pudding over graham cracker crust with whipped cream and chocolate pretties on top!

i’m claiming two days off!
doing nothing but the bare minimum up keep and care (cuddles included).

{memories} memorial week 2011

wow, what a weekend!!!

before i tidy the house. clean the kitchen. wash all the laundry.

i must write this post.

eric went and helped the city of joplin after last week’s horrible tornado ripped through. 6 miles long and 1 mile wide of the heart of the city.

while he was gone for the weekend, i did not want to stay home worrying about him running a chainsaw (they scare the tar out of me, one slip and his leg is gone….) so i packed up and went to my mom’s to spend a weekend with my mom, sisters and their families.

we went fabric shopping, played outside with aunt colors, crashed at aunt amanda’s one morning, ran to ottumwa’s menards and stamp store, bought flowers (which i planted yesterday! WHAT fun is flower planting!!!! new addiction!), ate frosty udder’s ice cream (black raspberry is the BEST!), played outside and swam at aunt amanda’s. shwoo! all while jace popped in 2 more teeth (making 6 total), decided to stand up by himself frequently, get down off of chairs, beds, and steps correctly, walk with a push toyย and was even caught crawling up grandma’s back stairway (he made it half way up before i stopped him… he was fast too!). what a big boy complex he has now and loved showing off to daddy when we all got home. lizzie has a blast with her cousins!! i usually don’t see her much. LOL but she got a new dress from aunt colors!! ๐Ÿ˜€

hearing him tell the stories… just mind blowing… horrible. absolutely horrible. we will continually be praying for these people as they attempt to rebuild their lives without dear loved ones, homes and possessions that remind them of those loved ones. in the mean time, we are cherishing everything we are blessed with in new ways, including each other.

God is good.

today, she sat at the dining room table coloring strawberry shortcake.

i turn around for a few moments and turn back – she colored a path down the table top, down the table leg and stopped, thankfully, before coloring the floor!

she passingly says “sorry!”

oooh i’m so tired of hearing “sorry”.

“sorry” does not excuse anything. or suddenly make a wrong, right.

to this girl, right now, it’s the go-to word.

“don’t talk back to me”

“oh, sorry!” walks off

“uuuh get back here. “sorry” did not just get you out of trouble!”

she was absolutely devastated when she realized “sorry” didn’t cut it and her favorite elephant had to take a nap on top of the fridge instead of cuddled warm next to her.

she LOVES writing her letters. she is getting super good at it. ๐Ÿ™‚ “z” is her favorite. she LOVES that she has TWO! in her name. she tends to get a little carried away and might add a little extra to her “z”.

i see myself in her now. in her facial features, i mean. i see myself in her in all the bad ways, but none of the good. until today.

she is so grown up to me.

still so much to work on. there always will be.

like, when walking into a church we were visiting sunday and proclaiming, “not this church! the OTHER ONE!” nice. this week we are going to “the other one”, she best not do this again and refer to the one we went to last week… ๐Ÿ™‚

11 months {jlb}

today marks 11 months old.

i sit here wondering where the past 11 months have gone.

savoring today.

i simply can’t believe it!
4 more days…
in 4 weeks he will be *gulp* one year old.
how surreal is that?!!?!?!?

jace at nearly 11 months old calls himself “bubba”, says ‘mama’, “shishe” (sissy), and ‘more’. he signs “daddy” perfectly.

he can throw a ball and catch it very well! he continually surprises us.

he is in love with the song, “rollin in the deep” by adele. it is currently his top favorite over ‘bumble bee’ by laurie berkner.

he slither crawls, crawls on all fours, pulls himself up, walks along furniture. he refuses to walk behind a push town after falling and hurting himself a couple times but is fully capable! ๐Ÿ™‚

he has stood up by himself several times (without holding on to anything) but absolutely refuses to do it most of the time. i’ve begun telling him he can do it and to stop being a wuss and to keep trying. in a very kind tone of voice but he’s made significant progress since i’ve started coaching him. boys! *eye roll*

we have this red bouncy ball that we got at old navy in quincy for 25 cents out of a giant gumball machine. it is his FAVORITE ball. if he is fussing, i can ask him where his red ball is and he will start looking everywhere for it and will entertain ย himself for a good 45 minutes regardless if he is tired or hungry.

he LOVES our dog lucy.

enjoys being outside. eating grass, dirt, bugs… crawling in the grass. the whole bit.

loves wrestling with anyone that is willing but his favorite is lizzie.

jumping on the bed with sissy trumps it all….

this is often the sight in the morning. love me some bed head!

is ready to ride a bike but cant figure out how to tell his legs to push, instead he uses his whole body to ‘scoot/thrust’ on the bike to make it move forward or reverse.

dances like a crazy lil man.

LOVES his swing!

i love when he is playing on the floor and i walk by and he reaches his arms high-into-the-sky and says “up” ย with a sweet little smile ๐Ÿ™‚ (the “up” part only happened one time, but the rest happens hundreds of times in a day)

he’s such a cool dude

jace has 4 teeth. his 5th popped through last week and went back inside.

he weighs 22-23lbs (it fluctuates) and is 30 inches tall.

he wears size 5 shoes.

18 months shirts, 18 month shorts, and 12-18 month pants.

i’m posting this for my own records. my bookmarks are a disaster!
